Processing According to Tradition

Primitiae Italiae anchovy fillets are used only anchovies fished in the Mediterranean Sea.

The fresh anchovies are processed and prepared to then be used for curing in dry salt without the use of any chemical additives. The maturation process tends to guarantee the hygienic quality of the product, as well as to improve its organoleptic characteristics.
