Traditional Production

Our pâté is made of sun-dried tomatoes produced according to the traditional recipe. After having been parboiled for 3-4 minutes and drained, tomatoes are left to dry.

They are then minced together with capers, garlic, oregano and salt while a very thin stream of olive oil is slowly poured in until the desired rustic and coarse texture typical of this recipe is achieved.

Delicious served on toasted bread, Primitiae Italiae sun-dried tomatoes pâté is also a ingredient for sophisticated breads and savoury cakes. Exquisite on pasta, it is also precious as an ingredient for stuffing recipes and to accompany meat, fish, and cheese.
