After having been peeled and washed, the onions are sliced thinly and put to macerate for at least 6 hours with sugar, salt, wine, wine vinegar, cinnamon sticks, cloves and laurel leaves. Once the aromas have been absorbed, the onions are cooked, at minimum heat, until the mixture resembles a jam texture.
